So when i give the Mechanic a specific RGB blue to put on my Dodge Charger, he puts it on and then the next time I spawn in my car the colour seems to have changed to something else.

You need to look at the car and do /customize

The unmarked dodge changer does this.
Just make a photon configuration for the car.

The Unmarked Dodge Charger likes to change colour without permission, like said above, you can make a configuration!
