Hong Kong is fantastic, one of the easiest countries in Asia to get around since there is alot of people that speaks English. Plus there aint so many scammers as you would see around the Mainland of China. However it seems as though Taiwan would be PERFECT for you, since most of the countries you want to visit has a larger culture in Taiwan. Mainly China and Japan, it's very modern (well alright, lets say modern then) and the BEST thing is that there is almost NO western tourism! People don't try to sell you stuff everywhere you go and it's.... clean. I know, I know, sounds like a myth in Asia that isn't Japan or Singapore, but I promise you.. it's clean. Taiwan isn't on most people's radar which is great, because you get a real Asian experience, though I only worked there for a month so I don't know it as well as other places.
